AYALA Champagne Dinner

Join us on Thursday 26th of February for an elegant evening of fine dining and Champagne at Lough Eske Castle, as we host the exclusive Ayala Champagne Dinner in our award-winning Cedars Restaurant.


The evening will be hosted by Ian Brosnan, one of Ireland’s most respected wine professionals. An award-winning former Sommelier at Michelin-starred Chapter One and former Wine Director for the Ely  , Ian brings decades of fine-dining expertise to the table. Now Prestige Account Manager at Findlater Wine & Spirits, he is a proud member of the Champagne Academy and a recipient of the Champagne Academy Diploma with Distinction, reflecting his deep knowledge and passion for the world’s most iconic sparkling wine.

Guests will enjoy a carefully curated four-course tasting dinner, with each dish thoughtfully paired to showcase the purity, balance and elegance of Ayala Champagne. Founded in 1860, Ayala is celebrated for its fresh, precise and low-dosage style, allowing terroir and craftsmanship to shine through in every glass. Throughout the evening, Ian will guide guests through each pairing, sharing insight into Ayala’s heritage, winemaking philosophy and the nuances behind every Champagne poured. 


The experience includes luxurious bed and breakfast accommodation, along with complimentary access to our indoor swimming pool and leisure facilities. An intimate and sophisticated evening for those who appreciate exceptional Champagne, fine dining and expert storytelling.
